Cette microbrasserie produit en effet quelque 1.000 hectolitres par an. L&rsquo;eau de brassage provient d&rsquo;une source des environs, le houblon vient du potager (et aussi un peu d&rsquo;Alsace) et les c\u00e9r\u00e9ales sont malt\u00e9es en Belgique.<\/p>\n<p>Les parents de Tom, Carla et William Schuwer, un couple de pharmaciens n\u00e9erlandais, avaient achet\u00e9 en 2006 cette ferme abandonn\u00e9e situ\u00e9e \u00e0 six kilom\u00e8tres au sud de Malmedy, et l&rsquo;avaient transform\u00e9e en brasserie. Tom est intarissable sur le plaisir qu&rsquo;apporte le fait de fabriquer un produit de A \u00e0 Z, de ses propres mains. \u00ab\u00a0Nous faisons tout nous-m\u00eames, de l&rsquo;\u00e9laboration des recettes au choix des ingr\u00e9dients, du design des \u00e9tiquettes \u00e0 la distribution.\u00a0\u00bb On sent que l&rsquo;amour du m\u00e9tier s&rsquo;est rapidement transmis de p\u00e8re en fils. Tom, qui a d\u00e8s le d\u00e9but donn\u00e9 un coup de main lors du brassage, a peu \u00e0 peu repris les r\u00eanes de l&rsquo;entreprise. Il brasse quatre jours par semaine, et le cinqui\u00e8me se charge des livraisons dans la r\u00e9gion. Le week-end, les Schuwer font visiter les installations aux curieux, sur demande. \u00c0 notre arriv\u00e9e, nous voyons justement passer Tom avec, sur l&rsquo;\u00e9paule, un sac de malt d&rsquo;orge fra\u00eechement moulu. Une douce odeur de c\u00e9r\u00e9ales flotte encore dans l&rsquo;air. Dans la cuve-mati\u00e8re, il m\u00e9lange l&rsquo;orge \u00e0 l&rsquo;eau de brassage et chauffe le m\u00e9lange.<\/p>\n<p>Apr\u00e8s une bonne heure, il filtre le mo\u00fbt ainsi obtenu, puis lui ajoute quelques kilos de houblon et am\u00e8ne le tout \u00e0 \u00e9bullition. Tom ajoutera encore quelques ombelles fra\u00eeches au brassin \u00ab\u00a0pour obtenir de beaux ar\u00f4mes de houblon\u00a0\u00bb. Ar\u00f4mes que l&rsquo;on go\u00fbte d&rsquo;ailleurs nettement dans les six vari\u00e9t\u00e9s de bi\u00e8re de la Brasserie de Bellevaux.<\/p>\n<p>Notre regard est attir\u00e9 vers le fond de la grange, o\u00f9 Tom dirige le processus de brassage. Les inscriptions sur l&rsquo;installation sont en japonais ! Du mat\u00e9riel japonais dans une brasserie belge ? Tom sourit. D\u00e8s que ceux-ci sont refroidis, le brasseur leur ajoute des levures, une culture sp\u00e9cifique pour chaque type de bi\u00e8re. Au bout de trois \u00e0 quatre semaines, le brassin sera devenu une bi\u00e8re pr\u00eate pour la consommation. Mais on peut d\u00e9j\u00e0 la go\u00fbter plus t\u00f4t ! Tom l&rsquo;appelle alors de la \u00ab\u00a0bi\u00e8re de cave\u00a0\u00bb. Il ouvre le robinet d&rsquo;un f\u00fbt et pr\u00e9l\u00e8ve une petite quantit\u00e9, puis incline le verre \u00e0 la lumi\u00e8re. La \u00ab\u00a0brune\u00a0\u00bb affiche d&rsquo;intenses reflets marron, pr\u00e9sente une mousse ferme et d\u00e9gage un puissant parfum de malt. Tom en avale une gorg\u00e9e et acquiesce.
